Triple Chocolate Vanilla Chip Bran Brownies w/Vanilla Ganache
Ingredients
Brownies:
- 1/2 cup margarine
- 2-1 oz squares unsweetened chocolate
- 1 cup sugar
- 3 eggs
- 1 cup Kellogg’s All-Bran Original Cereal
- 1/4 cup flour
- 1/4 cup cocoa
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup mini semi sweet chocolate chips
- 1/2 cup vanilla chips
Ganache:
3 to 5 Tablespoons heavy cream
1 cup vanilla chips
Directions for Triple Chocolate Vanilla Chip, Bran Brownies:
Preheat oven to 350 degrees F. Grease, Homemade Cake Release, an 8 x 12″ baking pan. Heat margarine, chocolate squares and sugar in a double boiler, making certain water is not touching bottom of bowl, until melted. Alternately, heat in microwave using directions on box of chocolate. Remove from heat and let cool to room temperature. Beat in eggs, one at a time. Add bran cereal and let sit for 20 minutes or until soft. Sift in batter; flour, cocoa, baking powder and salt. Stir to mix well. In a separate bowl, stir semi sweet and vanilla chips in with 1 Tablespoon flour, to coat. Fold into batter. Pour into prepared pan and cook in preheated oven 20 to 25 minutes until set when touched. Cool on rack.
Directions for Vanilla Ganache:
In a small saucepan, heat desired amount heavy cream until warm but before boiling. Using 5 Tablespoons produced the thin coating. Add chips and stir to melt. Pour over brownies and let set. You can put in the refrigerator for 15 to 20 minutes to speed it up.
