Tater Bugs

What child doesn’t love tater tots? I know My Boys Love them and could eat them at every meal!  We didn’t have any in the freezer so I decided to make my own. Easy to make and really good! My oldest said they tasted just like Tater Tots.  Ours, of course, do not look like them at all. Instead they have the appearance of bugs in flight or creeping and crawling around. Hence the name….Tater Bugs!  You child will love deciding what insect their food looks like. 

Messy fun to get the children involved in.  Just be certain to have towels or paper towels to keep hands wiped off.  If not, everything will stick to your hands and not together.

Tater Bugs

4 large potatoes, I used Idaho because that is what I had

1/4 to 1/2 cup minced onions

1 egg

2-3 tablespoons flour

1 teaspoon salt in potato water

salt, pepper and coarse ground garlic to taste

Directions

Peel and half potatoes.  Salt water and cook until just barely fork tender.  You don’t want them to be mushy. 

Grate the potatoes once cool enough to handle.

Sprinkle a little salt, pepper, garlic and toss.

Add egg and flour.  Mix together.

Heat a little oil, about 1 inch, in skillet.  Heat to medium.

Oil is ready to fry in once a drop of water dances.

Brown on both sides and drain on paper towels.  Salt immediately.
