A cake mix and a few ingredients is all it takes to have them coming back for more. Cake mixes definitely need to be a staple in the pantry for these yummy delights.
Red Velvet Crinkles
Ingredients
- 1 red velvet cake mix
- 2 eggs, room temperature
- 1/3 cup vegetable oil or 1/3 cup margarine, melted
- 1 teaspoon vanilla extract, or your favorite
- 1 cup confectioner’s sugar
- 1 tablespoon unsweetened dark cocoa, optional
Here’s what you do
Preheat oven 350 degrees F.
Mix with fork, sugar and cocoa, sit aside.
In a separate bowl, beat room temperature eggs with oil or cooled, melted margarine with a fork.
Add cake mix and mix until incorporated. Dough will be soft.
Roll into walnut size balls. Roll in sugar and cocoa mix.
Put on ungreased cookie sheet(s).
Cook 5 minutes, rotate pan(s) and cook another 3-5 minutes.
Take out of oven when you see brown around the edges and tops just barely moist.
