We love to eat quiche. Well, hubby and I love to eat quiche. The potato crust really makes this a great one for us. We had this last night and again this morning for brunch. Add leftover meat, use other veggies, your favorite cheeses..to make this your own.
Potato Crusted Broccoli Cheese Quiche
- 3 cups hash browns, thawed and patted dry
- 1/4 cup sour cream
- 2 Tablespoons margarine, melted
- 1/4 to 1/2 teaspoon salt
- 1/2 teaspoon ground garlic, optional
- 1/2 teaspoon dried thyme, optional
- 1 1/2 cups frozen broccoli, thawed, patted dry and chopped
- 1 1/2 cups cheddar cheese
- 1 cup milk
- 3 eggs
- salt to taste
- pepper to taste
Preheat oven to 400 degrees F. Spray 9″ pie plate. Mix hash browns, salt, garlic, thyme, sour cream and margarine. Pat in pie plate covering bottom and sides. Cook in preheated oven 20 to 30 minutes or until golden brown. Take out of oven and reduce heat to 350 degrees F. While crust is cooking: beat eggs and milk together in a bowl.
Stir in broccoli and cheese. Season to taste. Pour into baked crust. Cook 30 minutes or until center is set. Top will rise at the end of cooking and then deflate once taken out of the oven. Wait 5 minutes before cutting. Enjoy!
