A couple of days ago I saw an article in our newspaper about cooking in a cup. Did you happen to see that? I was intrigued by this as my family is getting to be so very Picky lately!! This will be perfect for me. I can cook what is wanted. Really wanted. It’s just that easy! No waste when everyone wants something different. Here is one of the “cup cakes” I have made. Pineapple Upside Down Cup Cake
- 3 1/2 tablespoons brown sugar, divided
- 2 tablespoons margarine, softened..divided
- 1/8 cup fresh pineapple
- 2 tablespoons fat free milk
- 1 egg white, beaten
- 2 tablespoons self rising flour
Cook 2 tablespoons brown sugar, 1 tablespoon butter and pineapple in microwave for 1 minute in a cup. Put cup on a plate while cooking. I used a 16 oz cup and it cooked 3/4 of the way up.
Cream remaining margarine and brown sugar together in a small bowl with wisk or fork. Mix in egg white, milk and flour.
Swirl margarine around cup to cover sides. Add batter.
Cook in microwave for 1 minute.
Take out and flip onto serving plate. Rearranging pineapple if needed.
