Pineapple Sherbert

Do you love frozen desserts as much as we do?  We could eat them every day, regardless the temperature.  A couple like chocolate, another vanilla and most of us love frozen fruit!  This sherbert is just what we have been wanting.  Frozen, fruity and smooth.  YUM!  Adapt this to suit your taste.

Pineapple Sherbert

Ingredients

  • 3 oz. box Jello Island Pineapple Mix
  • 1 cup boiling water
  • 1 – 1/2 cups superfine sugar, more if needed
  • 8 oz. frozen pineapple chunks*
  • 4 oz. pineapple juice*
  • 4 cups whole milk   
  • 2 cups half n half

Heat water to boil.  Add pineapple jello mix and sugar in a mixing bowl.  While water is coming to a boil, whip pineapple with enough juice, in a processor or blender, until smooth.  Add boiling water to jello and sugar. Stir until dissolved. Stir in whipped pineapple or pineapple frozen concentrate, mostly thawed.  Stir in milk and half n half. Refrigerate a couple of hours or until ready to make in ice cream maker. Make according to directions of machine.  Put in freezer for 2 hours or until harden. Enjoy!  

*Frozen pineapple chunks and pineapple juice may be substituted with 12 oz. frozen pineapple concentrate, mostly thawed.

Note:  Depending on the size of your ice cream machine, you may need to make this in two batches.  Keep the remaining mix in the refrigerator until ready to make.
