I decided to make peppermint dark chocolate cookies for my oldest son’s class. It’s the last day of school before spring break starts, YAY! St. Patrick’s Day is Saturday, so I wanted to make something special.
I looked through the pantry and found cake mixes. Yep, easy cookies are in the making for me today. They take a little bit of time but so worth the smiles. Update…..they were a hit with the children at school, and home!
Peppermint Dark Chocolate Cake Mix Cookies
Peppermint Cookies
- 1 yellow cake mix
- 2 eggs
- 1/3 cup oil
- 1 to 3 drops peppermint oil or extract, start with 1/4 teaspoon extract, adding more if desired
- green icing coloring, shade you like, it will darken as it sits
Dark Chocolate Cookies
- 1 dark chocolate cake mix
- 2 eggs
- 1/3 cup oil
- 1 cup mini chocolate chips, optional
For peppermint cake mix, mix all ingredients together. Add green coloring to cookie dough using a toothpick, to desired shade. It will darken the longer it sits. Wrap in plastic wrap and place in refrigerator while you make dark chocolate dough, mixing the ingredients together as above, and roll into balls. Get a little bit pinch of the dark chocolate and roll into a ball the size of a small grape. Make 18 – 21.
Take some of the green, size of a quarter, and flatten it out to 1/4″ or so. Wrap it around a piece of the dark chocolate ball. Adding more green dough if it doesn’t cover. Smooth. If the dough isn’t thick enough on top, it will show the chocolate underneath. I liked those just as well.
Bake in a preheated 325 degree oven for 7-10 minutes, depending on size. A very slight indentation will remain, when pressed with fingertip, when done. Do not over cook! They will show cracks. Immediately cool on a wire rack. As always, my oven may cook different than yours. Please adjust time accordingly.
To make Tiger Cookies….Get a little of both cookie dough and together in your hand several times. Either roll in a ball or flatten a little, then bake.
