Sweet fresh peaches, honey and Cabot Greek Yogurt combine to make this amazing Peach Mango Frozen Greek Yogurt. I opted to make this in the freezer. As much as I like an ice cream machine… I cannot make a great ice cream, or frozen delight, with any consistency.
There have been a few….Cheesecake Ice Cream, Vanilla Ice Cream are two that I can think of. Anywho, I went back to my old ways. Isn’t that the way it goes? Mixing the ingredients and letting the freezer work for me. I made this in the morning and by afternoon I had a healthy frozen treat for my boys.
P.S. I would love to try another ice cream machine…any suggestions?
Peach Mango Frozen Greek Yogurt
ingredients
4 to 6 medium to large peaches…..(4 cups) peeled, pit removed and sliced
1 Tablespoon lemon juice
1/4 to 1/2 cup honey
1 cup Cabot Mango Low Fat Greek Yogurt
1 cup Cabot Plain Low Fat Yogurt
Directions:
Peel, remove pit and slice peaches. Stir in lemon juice to coat. Add honey to taste. Pulse in food processor or puree in blender. Add Cabot Greek Yogurt and pulse to just incorporate. Put in freezer proof container and cover with plastic wrap or cover. I used an 9×13 glass pan. Freeze until solid..around 5 hours, more or less depending on freezer. Scrap with fork until fluffy. Alternately, you can chop the frozen Greek yogurt and pulse in food processor or blender. A stand mixer will also work. Eat now or return to freezer. Enjoy!
