Peach Coffee Cake
- 2 cups all purpose flour
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 3/4 cup margarine
- 1/2 cup sour cream
- 2 eggs
- 1/2 teaspoon vanilla extract
- peach pie filling, make your own
Preheat oven to 350 degrees F. Whisk dry ingredients together. Cut in margarine with pastry blender or a fork to resemble crumbles, reserve 3/4 cup for topping. Mix in eggs and sour cream, it may be a little lumpy. Stir in vanilla. Spray 11×7 pan. Spread batter in pan.
Top with peach pie filling. Sprinkle with crumbs. Bake in preheated oven for 25 to 35 minutes until top is starting to brown. Serve warm or at room temperature. Enjoy!
