It’s hard to believe a dish so simple, that tastes so amazing…..cooks in just 15 minutes! With only two main ingredients, Okra and Tomatoes, you cannot go wrong.
To make great southern dishes, you just have to use cast iron.
Season with freshly ground sea salt and black pepper.
Okra and Tomatoes
ingredients
4 cups fresh or frozen okra, sliced 1″
2 large Roma tomatoes, chopped
1 Tablespoon olive oil
1 teaspoon freshly ground sea salt, or to taste
1/2 teaspoon freshly ground pepper, to taste
Directions:
Heat olive oil in cast iron, or non-stick, skillet to medium. Add sliced okra and cook, stirring frequently, 10 minutes. Add a little oil if needed. Add chopped tomatoes, cook 5 minutes, breaking larger pieces apart. Season with freshly ground sea salt and pepper. Enjoy!
