Nutella Oatmeal Fudgesicles

It’s okay to have fudgesicles for breakfast.  As long as they are made with oatmeal and Nutella, I will gladly approve.  I don’t mind giving these to my boys early in the day at all.  They are always asking me for ice cream or popsicles around 10:00 in the morning.  

I thought I would make this to satisfy their cold cravings.  It worked!  The three of them loved them!  Until…..my oldest squealed about the oatmeal.  One of my twins then made a face and declared he wouldn’t eat them.  LOL  No fudgesicles for his breakfast!  At least, not today.   I will be making his breakfast popsiciles with vanilla and/or fruit.  Mmm, I can almost taste them.

Nutella Oatmeal Fudgesicles

makes 6 to 8 fudgesicles

Ingredients

  • 1/2 cup oatmeal
  • 1 Tablespoon ground flaxseed
  • 2 cups coconut milk
  • 1/4 to 1/2 cup sugar
  • 1/3 cup Nutella

Pulse in food processor or blender; oatmeal, sugar and flax seed until fine.  Blend in coconut milk, and Nutella until incorporated. Pour into 6 to 8 popsicle molds add sticks according to directions .  Alternately, you can use 3 to 5 oz. paper cups. If using, put a small piece of plastic over tops, make a small slit in the middle and add popsicle sticks.  Freeze until set, 4 hours to overnight.
