No Bake Fresh Blueberry Pie

Yes, you read it right!  An amazing pie .. hey, that’s what hubby said, without baking.  You will need to turn the oven on if you are going use a pie crust that isn’t graham cracker.  But, that is totally doable when you have a pie as the result, right?  Get your blueberries ready to nest in a crust for a simple, and rather pretty, dessert.

No Bake Fresh Blueberry Pie

Ingredients

  • 24 oz. (4 to 5 cups) fresh blueberries, gently rinsed and drained
  • 1 cup sugar
  • 3/4 cup water
  • 1/4 cup corn starch
  • 1 teaspoon fresh lime juice
  • prepared pie crust

Directions

In a saucepan, bring 2 cups blueberries, sugar and 1/2 cup water to a boil, stirring to keep from sticking. Once sugar has dissolved and blueberries have started to plump, mash with a potato masher or fork.  Mix corn starch with remaining 1/2 cup water to make a slurry. Stir into saucepan, along with lime juice. Continue to stir until very thick.

Remove from heat to cool. Once cool, fold in remaining blueberries.  Chill to set. Around 2 hours in refrigerator or 40 minutes in the freezer, checking so it doesn’t freeze. Although, I bet it would be great frozen!
