Love cherries! I love cherries, hubby loves cherries, two of my three boys love cherries! If I can make something in less time than normal, I’m all over it … especially if it is made with cherries! A few minutes can make the difference in sharing a memory in the making as my boys continually amaze me!
This pie is a little on the thin size but full of flavor and delicious! You will want to double this recipe…trust me.
Microwave Cherry Pie Filling
Ingredients
- 4 to 5 cups cherries, pitted
- 3/4 to 1 cup sugar
- 1/4 cup cornstarch
- 3 Tablespoons cold water
- 1 Tablespoon lemon juice, optional
- 1/4 teaspoon almond extract, optional

- 1 Tablespoon fine sugar, optional
Directions for Microwave Cherry Pie Filling
In a microwave safe bowl, add lemon juice to the pitted cherries, if you like your pie more on the tart side. Sprinkle desired amount of sugar.
Microwave 3 minutes at 1 minute intervals, stirring after each minute. Mix corn starch and cold water to make a slurry. Slowly stir into hot cherries. Microwave another 3 to 3 1/2 minutes…30 seconds at the time, stirring after each 30 seconds have passed. Stir in almond extract. Let cool before using in your favorite pie filling recipe. Enjoy!
Directions for Cherry Pie
Make a pie crust or prepare pie crust as directed. Put pie crust in an 8×8 square pan. Fill with cool Microwave Cherry Pie Filling. Fold pie crust sides over filling. Bake in a preheated oven 350 degree F oven 55 to 65 minutes or until crust is golden brown. Once out of the oven, sprinkle with one Tablespoon fine sugar, if desired.
Note: My cherries were somewhat sweet, I used 3/4 cup sugar and no lemon juice.
