Lime Pound Cake Loaf

I made this recipe, which is supposed to bread,  but is more like pound cake, and topped it with a refreshing drizzle of lime glaze.  I took it to the pool and in no time at all, it was gone!  So refreshing on a hot day.

Lime Pound Cake Loaf
Ingredients

  • 1/2 cup solid shortening
  • 1 cup sugar
  • 2 eggs
  • 2 teaspoons lime zest
  • 2 – 4 Tablespoons lime juice*
  • 1 – 1/2 cups all purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup milk*
  • 1/2 cup powdered sugar
  • 1 cup nuts, chopped fine, optional
  • or
  • 1 cup blueberries, optional
  • or
  • 1 cup coconut, in batter and/or topping, optional

Directions

For: Lime Pound Cake Loaf

Preheat oven to 350 degrees F.  Grease, Homemade Cake Release,  8×4 or 9×5 loaf pan. Sift flour, baking powder and salt, put aside.  Cream shortening and sugar together until fluffy.  Beat in lime zest and eggs.  Add 2 Tablespoons lime juice, if using, and milk.  Stir in flour until incorporated.  Do not over mix.  Smooth in loaf pan.  Bake in preheated oven 35 to 45 minutes until tested done with a toothpick.  Let sit 10 minutes and turn out to cool on rack.

For:  Lime Glaze

Mix powdered sugar and 2 Tablespoons lime juice.  Drizzle over cooled cake.  Alternately, poke holes in cake while still hot.  Pour glaze over cake and let sit in pan for 10 minutes.  Remove from pan to cooling rack.

*1 to 2 Tablespoons lime juice can be added to the batter reducing milk by the same amount.
