Oh…My! This Hash Brown and Sweet Pepper Kugel turned out so light yet full of flavor! We all loved it and a couple of us ate this, skipping the meat, with green beans to complete our meal. It is so easy to make, I do not know why I have never made this before! It is a keeper and will definitely be added to our menu.
Hash Brown and Sweet Pepper Kugel
26 oz. bag shredded hash browns, thawed
1 medium (1 cup) onion, diced
6 to 8 mini sweet peppers or 1 large red bell pepper (1 cup), diced
1/4 cup all purpose flour
1 – 1/2 teaspoons fine sea salt, or to taste
1/2 teaspoon ground black pepper, or to taste
4 eggs, beaten
3/4 cup 2% (your choice) milk
5 Tablespoons margarine, melted
Preheat 350 degrees F. Spray 8x10x2 pan with cooking spray. Place margarine in pan and put in oven while oven is preheating, watching so it doesn’t burn. Add flour, diced onions, sweet peppers, salt and pepper to thawed hash browns, stir together. Stir in beaten eggs, milk and melted margarine from pan. Pour hash brown mixture in pan. Cover with foil, bake 45 minutes. Uncover and bake another 15 to 25 minutes until set. Remove from oven. Enjoy!
