Two ingredients, well three if you add chips, nuts or marshmallows, in this moist and wonderful dark chocolate cake! The icing, you can make as much and as thick, as you wish.
I made a lot of icing to pour over the hot cake so it ended up as a rich, very moist and almost like a pudding cake. Gooey and decadent. Eat it warm or cold, my preference, out of the refrigerator. But, do, keep it in the fridge. Grab a fork and spoon and dig in!
Dark Chocolate Coca Cola Cake
- 1 15 oz box Pillsbury Dark Chocolate Cake Mix
- 12 oz Coca Cola, Diet if you prefer
- 1 cup dark chocolate, semi sweet, or peanut butter and milk chocolate chips, optional
Coca Cola Icing
- 1/2 to 1 cup Coca Cola
- 1/4 cup melted margarine
- 1/4 to 1/2 cup cocoa
- 1/2 to 1 teaspoon vanilla extract
- 2 to 4 – 1/2 cups confectioners sugar
Directions
Cake:
Preheat oven to 350 degrees F. Mix for 3 minutes or until the consistency of pudding. Spread in a greased 13 x 9 pan and cook 20 to 30 minutes, until toothpick comes out clean. Take out of oven a pour Coca Cola Icing over cake while hot. Eat warm or cold from the refrigerator.
Coca Cola Icing:
Melt margarine. When room temperature, add Coca Cola, cocoa, confectioners sugar…starting with 2 cups this may be bitter to you so keep adding until desired sweetness and consistency.
I used 4 1/2 cups confections to 1 cup Coca Cola which, was a little too runny for me. However…everyone loved it and it turned out very rich the next day after being refrigerated overnight. I prefer it cold and did not like it out of the oven. Guess I’m funny that way. 😉
