I ran across this old recipe the other day and knew my boys would love it. Of course, I changed it a bit here and there, you know I do. My hubby always asks me why..I usually don’t have an answer that’s just how I am. For this pie, I changed it by cutting down on the sugar and margarine. There was too much for me. You can even start with 1 cup sugar to see if that is sweet enough as this is a sweet pie. It tastes, and sets up like, fudge.
Fudge Pie
- 5 squares semi sweet chocolate
- 6 tablespoons margarine
- 4 eggs, beaten
- 1 1/2 cups granulated sugar
- 1 teaspoon vanilla extract
- 1 cup chopped nuts
- 1/2 coconut, optional
- 9″ unbaked pie crust
What you do:
- Preheat oven to 325 degrees.
- Melt chocolate and margarine. Beat eggs, sugar and vanilla together. I did this by hand.
Add nuts, chocolate mixture and coconut (I didn’t have any), if using.Pour into 9″ unbaked pie crust. Bake in a preheated 325 degree oven for 20 minutes and turn around. Bake another 20-25 minutes until set. Mine was still gooey inside but felt firm when touched on the top. It was very good warm. My oldest had his out of the oven with frozen vanilla yogurt on it. I keep mine in the refrigerator, you can keep your’s at room temperature if you prefer.
