No Bake Frozen Lemon Cheesecake with Vanilla Sweetened Berries

To start with..I have a really bad habit of making something, taking pictures and posting them on facebook BEFORE I write a post!  lol  I always get caught and end up writing it right then.  I hope I didn’t stumble or leave out anything.  Okay..now on with the show.  

It’s Hot Outside!!  When it’s hot I want a frozen or icy cold snack, treat, dessert, well, everything!  Fresh fruit is always a plus, too.  Today I sweetened strawberries and blueberries and added double strength vanilla to give them that extra loving touch.  This pie is fast to make with long lasting delight.  I really like this because I made it lower in fat and delicious to boot!  You are going to have to make this ahead of time so make plans accordingly.  After 4 hours in the freezer the boys wanted a piece.  It wasn’t completely frozen but still very cold.  At 6 hours it was just right!  Are you ready to make smiles?  Then get started!

Frozen Lemon Cheesecake

  • 1 premade reduced fat graham cracker crust
  • 2 8 oz neufchatel cheese, room temperature 
  • *you can microwave for 25-30 seconds, 5 seconds more if needed*
  • 1 14 oz can fat free condensed milk
  • 1/4 cup lemon juice, I juiced 2 lemons for a soft taste, use more if you want it tart
  • 1 Tablespoon or zest from lemons you juiced
  • 1 1/2 – 2 cups frozen whipped topping, thawed 
  • *mine was still frozen, I just beat it longer*

Vanilla Sweetened Berries

  • berries
  • vanilla extract
  • sugar or sweetener
  • Beat neufchatel cheese, condensed milk, juice and zest until smooth.  If whipped topping is thawed you can fold it in. I beat mine in..it was still frozen. 
  • Put into pie crust and freeze 6 or more hours

Vanilla Sweetened Berries

To each pound of strawberries, or blueberries, or half of each.  Rinse and slice or dice strawberries and leave blueberries whole.  Add 2 tablespoons artificial sweetener, or sugar, more or less depending on how sweet they are,  and 1/4 to 1/2 teaspoon double strength, or regular vanilla. Stir together until sweetener has dissolved and place in refrigerator an hour or two before serving.  You can also put it in the freezer if you are in a hurry about 30 minutes before serving. Oh My Goodness! These are great frozen!  

It’s always said to take pie out of freezer 10 minutes before serving.  I take it out and eat it right away. It is a frozen dessert, isn’t it? Your choice.  Top with your Vanilla Sweetened Berries and be the highlight of the meal.
