It’s Fall! Hopefully, we will see a change in the weather, something other than rain and heat would be welcomed. How is the weather in your part of the world? Wishing you comfort and sunshine, wherever you are.
I seem to think of using pumpkin when Fall is officially here and visual at the market.
Making me want to take them home to decorate, display and eat them. I did buy a pie pumpkin a couple of days ago but ended up using canned pumpkin for this Crock Pot Pumpkin Spice Oatmeal.
This is the first time I have cooked oatmeal in the crock pot and very pleased I did. It was like eating a Pumpkin Spice Muffin in a bowl. Warm and soft and quite filling. This is definitely a keeper and will be made often.
Crock Pot Pumpkin Spice Oatmeal
- 1 cup steel cut oats
- 3 – 1/2 cups milk
- 1 cup pumpkin, not the filling
- 1/2 cup applesauce
- 3/4 to 1 cup brown sugar, homemade
- 2 Tablespoons molasses
- 1 – 1/2 teaspoons ground cinnamon
- 1/2 teaspoon ground ginger
- 1/4 nutmeg
Spray crock pot with non-stick spray or rub with margarine. In a bowl, mix all ingredients together, pour in crock pot. Or, mix in crock pot. Cook on low 8 hours. Serve warm with dried fruit or nuts.
