Confetti Stuffed Cookies

Aren’t these just the most amazing cookies to celebrate with?  They would be perfect for New Year’s Eve, Valentine’s Day (little hearts), St. Patty’s Day (green clovers), Halloween (with little spider sprinkles), Christmas (trees and holly) and even a baby shower reveal with colored gems!  So many possibilities!

I was looking for something to make for my boys to celebrate New Year’s Eve and ran across these New Year’s Confetti Clock Cookies at Repeat Crafter Me.  Be certain to follow for great crafts ideas for your kids.

I used a sugar cookie mix as a shortcut following the directions on the bag. Feel free to use your favorite rolled cookie recipe.

Two cookie cutters, a large and a smaller one, will be needed.  Cut three cookies for each Stuffed Confetti Cookie.  Using the smaller cookie cutter, cut the center out of one cookie.  Place cookies on parchment lined cookie sheet.  Cook 7 to 9 minutes or until starting to brown around edges.  Let sit one minute and transfer to cooling rack.

Once cool, put one full cookie on a surface.  Melt a little bit of candy melts or chips according to directions.  You can also use frosting but may have to wait longer to finish the cookies. Outline bottom of cookie, one that is cutout, with candy or frosting and press on top of bottom cookie.  Fill hole with sprinkles and/or gems.

Top with another whole cookie.  Decorate with melted candy, or frosting, and sprinkles.

Confetti Stuffed Cookies
ingredients

  • Sugar Cookie Mix
  • 2 Tablespoons flour
  • 1 egg
  • 1/2 cup butter
  • cupcake gems
  • sprinkles
  • candy melts
  • frosting

Directions:

Make rolled cookie dough according to directions or use your favorite recipe.

Cut out three cookies for each Stuffed Confetti Cookie with the middle cut out of one.

Bake according to directions, around 7-9 minutes or until starting to brown around edges.

Remove from pan and cool on rack.  Once cool, put one full cookie on a surface.  

Melt a little bit of candy melts or chips according to directions.  You can also use frosting but may have to wait longer to finish the cookies. 

Outline bottom of cookie, one that is cutout, with candy or frosting and press on top of bottom cookie.  

Fill hole with sprinkles and/or gems. 
Outline top of cookie with candy or frosting.  
Top with another whole cookie.  
Decorate with melted candy, or frosting, and sprinkles.
