Cherry Cobbler 2

Made with frozen fruit, this is perfect for last minute desserts, afternoon snack, or late night delight!  Not overly sweet…just right for us.   Feel free to increase the sugar to your taste.

This cobbler will thicken a little more as it cools.  I made the cobbler in an 11×7 pan.  I think you could easily add additional fruit to the amount listed in the recipe.  Next time, I will do just that or make this in an 8×8 pan.  I made this last night…tonight, it is gone!  Enjoy!

Cherry Cobbler

  • 10 oz bag frozen dark sweet cherries
  • 1 cup all purpose flour
  • 1/2 cup sugar,  plus another 3/4 cup
  • 1 teaspoon baking powder
  • 1/8 teaspoon salt
  • 3 Tablespoons coconut oil or butter, softened
  • 1/2 cup milk
  • 1 Tablespoon corn starch
  • 1 cup boiling water

Spray 11×7 or 8×8 pan with non-stick spray or use Homemade Cake Release.  Preheat oven to 350 degrees F.  Whisk 1 cup flour, 1/2 cup sugar, baking powder and salt together.  Add milk and coconut oil and mix to combine.  Spread over cherries.  Whisk the remaining 3/4 cup sugar and corn starch together and sprinkle over batter.  Pour boiling water over top. Bake for 30 to 40 depending on size of pan or until toothpick inserted in top comes out clean.
