Who doesn’t love snacking? I know we do and we do it often! There is just something about eating with hands. Hand reaches to chip, to salsa and dip, to veggies (a least one son’s hand does) to hungry mouths that await anxiously. Snack, snack, smack! Yes, that was my boys!
They tend to get a little overzealous with chips and snacks and anything they can make a loud, mouthy sound with. I love my boys..but let’s keep it quiet, okay? This lip smacking Black Bean Salsa was just another noise in the bowl app, awaiting my hungry boys. I adapted the recipe from a can of Bush’s Best Black Beans!
You may need to double the recipe, depending how many and how hungry the troops are. I served them with Tostito’s Scoops and Cheez-It Grooves Sharp White Cheddar Crackers.
Black Bean Salsa
ingredients
1 27 oz. can Bush’s Best Black Beans, rinsed and drained
1 10 oz. can diced tomatoes and green chilies, drained
1 cup corn, frozen or canned
1/2 cup diced sweet onion
1/2 cup yellow, orange or combined, sweet mini peppers, diced
1/3 to 1/2 cup Italian dressing, homemade Italian Dressing Mix
1/2 teaspoon ground cumin
Directions:
Rinse and drain Bush’s Best Black Beans put in large mixing bowl. Drain tomatoes and green chilies and corn, add to bowl. Mix remaining ingredients. Cover and refrigerate at least 2 hours or longer….if you can wait that long. It’s great marinated overnight or make in the morning of evening serving.
