This is an quick and delicious recipe, love those! If you love Alfredo Sauce, you will love this Alfredo Spread. It is super easy to make. I used it in this baked layered spinach alfredo quesadilla. I’m pretty certain you will want to double this, I wish I had. ~smile This is a great fast meal, side or appetizer. We are starting to eat a lot of spinach recently. Baked Layered Spinach Alfredo Quesadilla
- Ingredients
- 3 flour tortillas
- 1 cup alfredo spread
- 1 16 oz container fresh spinach
- fresh ground pepper, to taste
- margarine for top tortilla
- low fat parmesan to sprinkle on top
Directions
Grease an 8″ cake pan or springform pan with spray or Homemade Cake Release.
Preheat oven to 350 degrees. Spread alfredo on tortilla to cover and put on the bottom of the pan, alfredo side up. Add half the spinach, it will seem full but will shrink. Grind a little fresh pepper over the spinach, if desired. Repeat, ending with a tortilla on top. Brush with margarine or lightly spray with non-stick cooking spray.
Bake in preheated oven for 10 minutes, check to see if spinach is cooking. If top tortilla seems to be drying out, add more margarine or spray again. Cook another 5-10 minutes or until the spinach is cooked and the top is lightly browned. Sprinkle with parmesan or cheddar, cheese the last few minutes.
