Baked Chicken and Dumplings

Bring chicken broth, celery, onions, salt and pepper to a boil.  I love the celery leaves!

Add pieces of chopped chicken.  Any leftover or rotisserie chicken will work.  Turkey is great also!

Flour surface and rolling pin and roll out the dough.

Cut dough in strips.

Place on a platter and use as soon as possible.

Boil a little a time, stirring gently to prevent sticking.

Put about half the dumplings and all of the chicken, onions and celery, in a greased 13×9 pan.  I could eat it just as it is!  If you wish to, cook the dumplings about 20  to 30 minutes until set .. no need to bake.

Cook the rest of the dumplings and put in the pan.  Pour chicken broth over top.  You do not need to use all if you like a little crunchy on top.  Dot with margarine like my sweet Mama always did, and bake 30 to 40 minutes until set and light brown.

Baked Chicken and Dumplings
ingredients

  • 18 Rhodes White Dinner Rolls, thawed with a slight chill
  • 10 cups chicken broth
  • 3 cups cooked chicken, chopped
  • 1 cup sliced celery with leaves
  • 3/4 cup sweet onion, diced
  • 1 teaspoon finely ground sea salt, or to taste
  • 3/4 teaspoon finely ground sea salt, or to taste
  • 1/4 cup butter or margarine, optional

Directions:
Take 18 Rhodes Bake-n-Serve White Dinner Rolls out of freezer and thaw. Preheat oven when dough has thawed,  to 350 degrees F.  Grease 13×9 pan.  Chop and slice celery, onions and chicken while waiting for rolls to thaw.  Put chicken broth, chicken, celery, onions, salt and pepper in a large stock pot and heat to a boil.  

While stock is heating  put rolls together to form a ball.   On a floured surface, roll dough very thin, adding more flour and flipping over as needed to make a large, thin rectangle.  Alternately, you can roll individual rolls (my boys did this) or half of them, at a time.  Using a pizza cutter or sharp knife, cut dough into desired size strips.  

Keep away from lights and heat to prevent the dough from sticking together. When all strips are made..add a few at a time to the boiling broth. Cook 3 to 5 minutes, gently stirring and adding more until you have half in pot, to prevent sticking.  

When the dumplings are cooked, put them in the greased 13×9 pan with chicken, onions and celery and broth to cover them.  Cook remaining dumplings,  put in pan adding just enough broth to cover dumplings. Dot with butter or margarine, if desired.  Bake in preheated 350 degree F oven 30 to 40 minutes until bubbly and top is light brown.  Enjoy!
