I love fall! And while it is still hot as blazes here, I can dream of cooler weather with the help of fresh pecans and apple cider. These Apple Cider Spiced Pecans are perfect in every way. Besides the amazing taste and crunch and goodness overall, my non-pecan eating son (I know, who would have thought?!) will now eat pecans! Yes!

I really think I should have at least doubled this recipe! Seriously, I could eat them all by myself! A couple here, a few there. Please, hide them before they are all gone!
Wouldn’t they be great in a pie? On top of homemade vanilla ice cream? In and on a pound cake? Topping a salad?! That would be a sure fire way to get my oldest to eat more salads!
A great way to serve in these edible ice cream cones! Sugar cones would be amazing, although I didn’t want to overdo the sugar!
Apple Cider Spiced Pecans
2 cups apple cider
2 cups pecan halves
1/3 cup light brown sugar
1/2 to 1 teaspoon apple pie spice
pinch of salt
Directions:
Soak pecans in apple cider 30 minutes, more or less.
While they are soaking, mix brown sugar, apple pie spice and a pinch of salt together in a mixing bowl.
Preheat oven to 250 degrees F.
After pecans have soaked. Toss them in brown sugar and spice mixture. Stirring to coat each pecan.
Spray cookie sheet with cooking spray or use parchment paper. Place pecans on cooking sheet, separating if needed.
Bake 30 minutes, stir and bake another 30 to 45 minutes, stirring every 10 to 15 minutes. They are done when pecans are dry to touch. Watch carefully toward the end, so they do not get too dark, they will taste bitter! And that would make you cry. Seriously, it would!
