Apple Cider Bubble Bread

I love using frozen bread dough to make appetizers, snacks, desserts and even meals!  Rhodes Brown-N-Serve White Dinner Rolls is the only one I use.  Don’t you just love using them?  So convenient to use, the aroma and taste!  LOVE!   

I wanted to make something for my boys and put half a bag of rolls. in a pan, in the refrigerator to thaw while I went shopping.  I returned home with a new apple cider caramel drink mix, by Alpine.  Have you tried this?  It is so good!  My thoughts then turned to the dough in the fridge.  I knew what I would make…Apple Cider Bubble Bread!

It wasn’t hard to figure out what to make.  My boys love cinnamon rolls and I already had plans to make them (dough thawed in the refrigerator), I went with it.  LOVE!  My oldest even put them in a bowl of cereal!  Yes, I know, but he said it was great!  He called it breakfast dessert!  
This recipe makes one 13×9 pan.  

You can easily double this by using the entire bag of Rhodes Brown-N-Serve White Dinner Rolls and doubling the ingredients.  Now that I think about it, you really do need to make two pans if you eat like we do!   You can decrease the caloric intake by using Sugar Free Spiced Apple Cider Drink Mix and Splenda Brown Sugar Blend.  Win!

Apple Cider Bubble Bread
makes one 13×9 pan

  • 20 Rhodes Brown-N-Serve frozen white dinner rolls, just thawed
  • 2 apples, peeled and diced
  • 2/3 cup to 1 brown sugar or Brown Sugar Splenda Blend (adjust amount according to directions on bag)
  • 2 teaspoons cinnamon, if using apple cider caramel drink mix
  • 2 envelopes Alpine Apple Cider Caramel 
  •     or Spiced Apple Cider Drink Mix
  • 1/4 cup margarine, melted
  • 1/2 to 1 cup pecans, chopped (I didn’t have any)
  • 2/3 to 1 cup powdered sugar
  • 1 to 1 1/2 Tablespoons water, milk or apple cider
  • 1 teaspoon vanilla or maple extract

Spray a 13×9 pan with non-stick spray.  Place rolls in pan until just thawed.  Use whole bag and two 13×9 pans to double recipe.  Once thawed, preheat oven to 350 degrees F.  Cut rolls into quarters.  Mix brown sugar, apple cider, caramel or spiced, drink mix, and cinnamon.  

Add apples to rolls and sprinkle half brown sugar mix over rolls.  Add pecans to remaining brown sugar mix and set aside.  Toss rolls and apples to coat.  Adjust rolls to fit in pan.  Melt 1/4 cup margarine and pour over rolls.  Sprinkle with remaining brown sugar mix.  Cook in preheated 350 degree oven, 15 to 20 minutes until done, lightly brown and sugar is melted.  Let cool 5 minutes, longer if you want to see the icing on top.
Mix powdered sugar, extract and enough liquid to make a drizzle.  Drizzle over top.
