A take on an old recipe that proves to be even better than your grandma’s. Well, maybe not, because y’all know your grandma makes the best, right? Of course she does! I bet ya these 7 UP Buttery Pan Biscuits could rank right up there with hers. And oh, there are only 4 ingredients!
I googled 7 Up biscuits and my sweet friend Marsha’s blog, The Better Baker, came up. This recipe is based on hers, I changed the amounts just a tad. She mentioned using Greek yogurt and I just happened to have some in the fridge I bought yesterday for another recipe. The Greek yogurt makes the biscuits rich and gives a very slight tang like buttermilk. LOVE IT!
Melt margarine, or butter, in pan.
Whisk biscuit mix. Add Greek yogurt. The same amount of sour cream can be used to replace the Greek yogurt.To see my Homemade Biscuit Mix
7 Up added to the mix.
Add dough to pan with melted margarine.You can also pat out into individual biscuits with floured hands.
Turn dough over and pat out as even as possible. I didn’t seem to follow my own directions.
I cooked it like cornbread, instead of making into biscuits, as a whole and cut into squares after it was baked. The bottom turned out a little bit crispy. Cook less if you do not wish the crispy texture. While the inside is light and rich and well, just plain wonderful!
No need for butter! Yes, it’s that good!
7 UP Biscuits
2 1/4 cups biscuit mix, Homemade Biscuit Mix
1/2 cup Fage Nonfat Greek Yogurt
1/2 cup 7 UP
5 Tablespoons margarine, I use I Can’t Believe It’s Not Butter
Preheat oven to 400 degrees F. While preheating, put margarine in an 8×8 pan and place in oven until just melted. Watch carefully so it doesn’t turn brown. Mix biscuit mix (homemade), greek yogurt and 7 UP together until just mixed. Put dough in pan with melted margarine and turn over. Pat out evenly in pan. Cook 14 to 16 minutes until light brown. Great right out of the oven. Enjoy!
