Maters and Rice

Thoughts of Mama standing at the stove making this delicious dish from her canned tomatoes.  Sometimes she would fry up some thick rind bacon to eat with this and make a batch of homemade buttermilk biscuits!  Comfort in the form of food is the greatest healer.  It can calm you when you are upset.  Bring a flood of memories (as now) of the special people and times shared with them.

Make a pot of this, feel the comfort from within and make some memories with the ones that are special in your life.  <3

Very easy to make.  I don’t have any canned tomatoes…mine came from the store in a can.   Wish we had a Garden other than one the boys planted to see how it grows.  They did a great job with theirs but it was ust to get them started with the love of growing their own food.  How it makes the taste richer in every aspect.  They will be growing another garden, hopefully a BIG ONE,  for the fall.  Stay tuned.  <3

Maters and Rice

28 oz can of Diced, Crushed or Whole Tomatoes (if whole, squish with your hands)

1 cup Long Grain White Rice

1 Tablespoon Bacon Grease, optional

1/4 teaspoon Ground Pepper

1/4 teaspoon Salt

1 teaspoon Sugar, optional 

Bring everything except rice to a boil over medium heat.  Add rice when boiling..stir, cover and simmer for 15 minutes.  Stirring occasionally. If rice isn’t done cook longer, checking every minute.  It should be ready in 5 more minutes. Taste and adjust seasoning, adding a little water, if needed.  Just a hint of sweet, a pip of the pepper and a deep, rich taste of Maters. Enjoy!
