Whoopie Pies

The family had a Beautiful Day having Fun and Making Memories!  When we got home…tired but still wanting to do more, we decided to make our version of Whoopie Pies.  Using a store bought cake mix and making our own frosting, we didn’t have any in the pantry, we made this delicious and cute “Whoopie Pies”!

Here is our take..simple and full of Yum!

Whoopie Pies

Cookie Part

1 cake mix

2 eggs

1/3 cup oil

Stir together with spoon and make into balls the size of a golf ball.  Bake in a preheated oven, of 350 degrees, for 7-10 minutes. As always…my oven cooks different from yours so check at the earliest time and adjust until they barely leave an indentation when lightly pressed.

Cool for 1 minute in pan and move to wrack. 

While the cookies are cooking you can make your frosting, or sit back and relax if you are using a can of store bought.  These are like cupcakes with the frosting on the inside. Y’all know how I like to mix things up. 😀

Homemade Frosting 

1/2 cup (1 stick) butter, room temperature 

2 cups Powered Sugar

4 Tablespoons Milk (start with 2 and add more as needed)

2 teaspoons Vanilla Extract

Mix together to get to desired thickness.  

Cut cookies in the middle.   Add frosting. Enjoy!
