I am going to make my own Vanilla Extract. My friend Sandi Hawk told me to use Bourbon for the best extract…Canadian to be exact. She also said I could use cheap and leave the beans in longer. Thanks Sandi! It’s great having a Chef as a Dear Friend!
1 750 ml of vodka or rum that is 80 proof
12 vanilla beans
Remove 1/2 cup of the liquor from each bottle. Slice the vanilla beans lengthwise and put in bottles. Store in a dark place for 2-3 months, giving a shake every week.
I think I will put this in decorate bottles to give as gifts. That is, if I don’t use it all baking. : )
